Schedule

Monday 14th: Arrival

You'll arrive to San Jose Costa Rica by Sunday 13th of October, We Recommend you stay at Alajuela backpackers then on Monday 14th catch early bus from San Jose to Puerto Jimenez or optionally you can Fly from San Jose to Puerto Jimenez. Feel free to arrive at Finca Morpho anytime after 12:30pm on Monday via taxi or bus from Puerto Jimenez or meet up with us in downtown Puerto Jimenez for complimentary transportation 5:15pm departure from Puerto Jimenez to Finca Morpho (45 min Drive) in time for "Beach Full Moon Rise Ceremony Part I" starting at 6pm (Moon Rises at 6:29 PM visible 100%) followed by Checkin & dinner.

Tuesday 15th: Workshop Introduction -Cacao Bean Judging & Tasting -Roasting 101

6:00-7:00am: Yoga

7:15-8:15am: Breakfast

8:30-10:00am: Meet & Greet, Workshop Introduction & Goals , Talk about what we will learn and expectations. Safety, equipment, schedule, and Q&A.

10:00-11:00am: Cacao 101, Economics of the Supply Chain & Global Snapshot of Cacao to Chocolate industry. Introduction of CocoaEthika

11:00-12:30pm: Cacao Bean Tasting, Cut Test & General Judging & Chocolate Tasting

1230-2:00pm: Lunch

2:30-4:30pm: Principles & Practice of Cacao Bean Roasting Part I

4:30-6:00pm: Winnowing Husk Collection and Uses + Cacao Husk Tea Preparation

6:30-7:30pm: Moonrise Ceremony Part II (Rises at 7:10 PM visible 98%)

After Ceremony: Dinner

Wednesday 16th: Farmer Appreciation & Harvest -Fermentation 101

6:00am: Departure to Cacao Farm

8:00-12:00pm: Harvest and Gathering & Opening of Pods

Noon-1pm: Lunch

2:45pm Arrive Back at Farm

4:00-5:30pm: Box Preparation & Begin Fermentation

Friday 18th: Fermentation & Drying -Roasting Part II

6:00-7:00am: Hot Chocolate & Yoga

7:15-8:00am: Breakfast

8:00-10am: Fermentation Theory & Practice. "First 24 Hours" (air flow, temperature data collection and data entry, retrieval importance and usage.

10:00-11:00am: Fermentation Hours 24-Finish (turning and aeration, temp data collection, sensory data collection, frequency of aeration. Signs of over and under fermentation and ideal targets for flavor range targets.)

11:00-1230: Cacao Bean Tasting, Cut Test & General Judging

12:30-2:00pm Lunch

2:30-3:30pm -Ending Ferments & Transfer to Drying Stage (washing, transportation embodiments to solar dryer, time frame importance and avoiding off flavors as a result of poor post fermentation handling).

3:30-6:00pm: Principles & Practice of Cacao Bean Roasting Part II

6:00-730pm: Dinner



Saturday 19th: Chocolate Laboratory Part I

6:00-7:00am: Yoga

7:15-8:00am: Breakfast

8:00-10:00am: Cacao Butter Pressing & Uses of Cacao Butter & Powder Processing (process cacao into butter and powder)

10:00-1200pm: Chocolate Tasting

1230-1:30: Lunch

2:00-6:00pm: Chocolate Lab Part I: Pre-grinding Cacao and Filling of Melanger and maintenance Principles, Unloading Melanger, Tempering, molding and packaging

6:15-7:15pm Dinner


Sunday 20th: Chocolate Lab Part II, Drying & Storing Cacao

7:15-8:00am: Breakfast

8:00-10am: Chocolate Lab Part II-Follow up skill practice

10:00-11am: Chocolate Pairing 1 hour

11:00-12:00pm: Collection and storage of Cacao Juice & different uses (caramel, ice cream, beverage, fruit leather).

12:00-1:00pm: Lunch

1:00-2:30: Principles of drying, curing/packaging & storage

2:30-3:00pm: Identifying Off Flavors & right and wrongs of Bacterias/Molds how to identify problems through sensory data and actions)

5:00pm: Closing Ceremony

After Ceremony: Dinner


Monday 21st: Departure

6:30am: Breakfast

7:30am: Complimentary transportation back to Puerto Jimenez

Venue Highlights

Finca Morpho has two distinct seasons, community season and introspective season. Community season focuses on the shared experience with many optional activities that include permaculture, yoga, meditation, dancing, singing, authentic relating, crafting, and more. We have a few required activities, including weekly 'MOOP' and Recycling days and communal meal participation. There are plenty of people and activities to fill your time and find new and old passions. This season runs from April to August.


Introspective season is designed to focus on personal growth by maximizing free time for self-care and development. There are little to no activities scheduled, and no guaranteed communal meals. Anyone can offer meals or activities but they are neither frequent or consistent. Plenty of projects are going on however, and work traders may come to the farm to accomplish various planned tasks. This season runs from September to February.

Accommodations

Accommodations are self-sufficient, rustic and beautifully set amongst the jungle

Shared Glamping Tent - There are 10 tickets available for beds in our glamorous camping (glamping) tents for the Chocolate Workshop 2019.

Situated beachside under a shady canopy of almond trees, these luxuriously spacious tents provide a peaceful place to slip into dreamland to the rhythmic sound of ocean waves. A single mattress and linens are provided inside, bring your solar rechargeable lights and other desirable accouterments to really make it feel like home!

Composting toilets are available throughout the property and we ask that only non-toxic, biodegradable soaps and toiletries are used onsite. If you do not have this, we do provide a hair and body shampoo in the shower house.

We will gladly accommodate with notification your requests to be roomed with friends that have also completed their booking for a shared glamping tent.

To the extent possible if requested, we will also establish men and women's designations on these shared sleeping spaces.


Shared Room With Bed-

This booking is for a single bed with linens in one of the shared rooms on the grounds of our permaculture farm.

It will be wet season and yet it can be warm too. So pack rain gear and boots with appropriate clothing for warm days at the beach.

Composting toilets are throughout the property and we ask that only non-toxic, biodegradable soaps and toiletries are used onsite.

If you do not have this, we do provide a hair and body shampoo in the shower house.

All meals and scheduled activities for the entire event are included!

There are 14 spots available in shared cabins at Finca Morpho. Reserve yours today and expect a beautifully bonding experience with new friends.

Private Room -

This booking is for a Private Room on the grounds of our permaculture farm.

It will be the wet season yet can be warm too so pack rain gear and boots with appropriate clothing for warm days and at the beach.
