Alex Marks in his own words: It has been first a passion and then a vocation, I’ve been cooking and interested in food for my whole life, from cooking with my mother and grandmother to running Michelin starred kitchens (Maze, The square, Foliage by Gordon Ramsey), I have never had an interest in anything else. During my time in Ibiza and London, I have been lucky enough to work with many local organic producers. I have a belief that using the local producers means that not only are you giving back to the economy of the island, and our meals will be fresh, organic and carbon-free. All vegetables and fruit will be collected from the ground or trees and then onto your plate in a matter of hours: meaning you get the full nutritional benefits and taste of the produce.
