Why study with them?
Chef Joaquín is the culinary guide and host of the Casa Bocote retreat experience. With a deep respect for ingredients, tradition, and creativity, he leads guests through an immersive exploration of food that connects technique, culture, and the natural environment.
Chef Joaquín is also an instructor at the Colegio Culinario de Morelia, one of Mexico’s most respected culinary schools, known for its strong focus on regional gastronomy and cultural heritage. Through this institution, he has participated as a presenter and collaborator in national and international culinary events, sharing knowledge about Mexican cuisine, traditional ingredients, and contemporary techniques.
The Colegio Culinario de Morelia works closely with important gastronomic initiatives such as the Morelia en Boca Festival Internacional de Gastronomía y Vino, a renowned festival that brings together chefs, producers, and food thinkers from around the world to celebrate the richness of Mexican culinary culture.
Chef Joaquín’s work is also inspired by the culinary traditions of Michoacán, a region whose gastronomic heritage played a key role in the historic recognition of Traditional Mexican Cuisine by UNESCO. This recognition was made possible largely through the work and knowledge of the traditional cooks of Michoacán—women who have preserved ancestral cooking techniques, native ingredients, and community food traditions for generations.
During the retreat, Chef Joaquín shares this living heritage through hands-on cooking sessions, ingredient explorations, and collaborative meals. His teaching style is relaxed, engaging, and participatory, inviting guests of all skill levels to cook, experiment, and experience the depth of Mexican gastronomy.
